Sun Dried Burgers with Avocado Smear

Nurse Tiffany: "I am about to make a new recipe."
Patient Paw: "Oh Nooooooo."

Hmmmm...how is one to feel after that??  I am NOT deterred!  I am going to make a new recipe that I found in a recent mailing and he is going to like it!

Once I got started he meandered  in and said..."might be good."

It is.

Upon sitting down to eat, he said, "Thank you,Tiffany, it was very different. Very tasty."




I served with a side of cottage cheese and flax seed oil mixed in like the Budwig protocol. He can eat it now but won't. I suppose now that he can choose what he can eat it is not as easy for me to decide for him. There are worse things 🤗

Energy Balls

I can't believe that I haven't posted anything new since November! In some ways it feels like a lifetime ago.

Delbert continues to make strides in his health and is currently undergoing Lymphadema therapy. He goes twice weekly and post surgery progress is being made.  We have one more dental surgery at the end of this month and surely all of the soft food knowledge gathered will continue to be a help.

Doctoring up the Ensure drinks have been the best plan as of late to get nutrition into his body. He is free to eat anything he likes now and boy does he try! However all those hotdogs,cheeseburgers and supreme pizzas that he had missed do little to help with a full body recovery, maybe more mental than anything else 😉.

Having gone back to work instead of being Nurse Tiffany full time has put a damper on kitchen creativity, so I was excited to try a new recipe this evening. The dough is currently chilling and will be rolled into balls soon. I plan to roll a few without chocolate chips in them just for the old feller.  It makes me happy to contribute positively to his health. Weight loss continues to be an issue and a little fattening up is just what I like to do...with healthy fats, of course.

Happy New Year.  Happy because we're still here.

Sunday dinner

There are no words to describe the happiness of having all the family home for dinner. After a hard weekend of saying goodbye to yet another loved one lost to cancer, it feels amazing to have the moment of one more dinner together before the unknown of tomorrow.

Tonight we had a small feast of chicken thighs and stuffing in the crock pot with scalloped potatoes. Followed by leftover sweet potatoes and freshly baked salted caramel brownies, all that he could enjoy.

It is these small things that when we look back later in life will have been the big and best things...

Thanksgiving dinner

 
 WE are still on a soft food diet, but not for long!  To make Thanksgiving dinner easier for us all I will be making the recipe below, with mashed potatoes, corn pudding and a sweet potato kushaw mixture on the side plus a Key Lime Pie for dessert!

Crock Pot Turkey Cutlets with Stuffing

This easy Crock Pot turkey recipe is sure to become one of your favorites. It's like a mini Thanksgiving meal in one, and it's so simple. The stuffing goes into the Crock Pot first, then the turkey cutlets, and finally apple pie filling for a layer of sweetness. To change things up, consider stirring some dried cranberries into the apple pie filling.
Ingredients
  • 3 stalks celery, diced
  • 1 medium onion, diced
  • 6 cups stuffing cubes
  • 2 cups chicken broth
  • 1 tsp. poultry seasoning
  • 1-1/2 lbs. turkey cutlets
  • kosher salt and freshly-ground black pepper to taste
  • 1 can apple pie filling (optional)      
  • Prep Time: 15 minutes
  • Cook Time: 360 minutes
  • Total Time: 375 minutes
Preparation
  1. Spray the inside of the slow cooker stoneware with cooking spray.
  2. Place celery, onion, stuffing cubes, chicken broth and poultry seasoning in the Crock Pot. Stir.
  3. Lay turkey cutlets on top of the stuffing mixture in a single layer.
  4. Season with salt and pepper. Pour apple pie filling on top.
  5. Cover and cook on low 6-8 hours or high 3-4 hours.

Diced Mango

A soft food diet can be tricky when trying to fit in fruits and vegetables.  I purchased a can of diced mangos that are so surprisingly soft and delicious.  It was a new item which is nice for variety.

Baked Eggs Italian Style

Ingredients

  • 4 cup(s) store bought marinara sauce   
  • 1/2 cup(s) basil, fresh, chopped (do not use dried basil)   
  •   8 large egg(s)   
  • 1 cup(s) grated Parmesan cheese, such as Parmigiano-Reggiano   
  • 1/2 tsp red pepper flakes, being omitted for today                                                                                                                                                                  
Instructions
  • Position the rack in the center of the oven and preheat the oven to 350°F.
  • Pour the marinara sauce into a 9- X 13-inch baking pan. Sprinkle the chopped basil over the sauce.
  • Use the bottom of a small custard cup or a similarly sized glass to make 8 rounded indentations in the marinara sauce. Crack an egg into each of these indentations.
  • Sprinkle the Parmigiano-Reggiano and red pepper flakes over the tops of the eggs. Bake until the egg whites are set, the yolks are a bit runny and the cheese has melted, about 18 minutes. Serve by scooping eggs and sauce into individual bowls, using a large spoon. Yields about 1 egg and 1/3 cup sauce per serving.

Notes

  • Eggs baked in the oven offer a wonderful creaminess, almost better than those cooked on top of the stove. However, the oven's constant, ambient heat can toughen the eggs quite a bit — so a little fat (as here, in the shredded cheese) protects the delicate whites and keeps them tender.

UPDATE: Had to bake for about 10 minutes longer than above, had a hard time making the indents for each egg but it turned out great.  VERY interesting and he ate it!  There is plenty left for later which is always a good thing.
